There is an app called Llama that lets you do this. It can have your phone
perform certain actions based on certain conditions. One of the conditions
is plugging or unplugging an earphone, and one of the actions is to switch
the sound profile. It can do much more, like having your phone become silent
when at a certain location, e.g. a concert hall, or changing the profile and
settings based on the time or on certain days of the week.
This is really a useful app, and it's entirely accessible. The developers
recently labelled all the buttons after I asked them for this.
