Text edit doesn't have a word count built in by default. However, I have scripts on my softcon pages at (http://www.softcon.com/mac/) that will let you perform this function. Alternatively, you can download my version of text edit (also on that site) which will perform word/line/paragraph counts for you, built-in to the edit menus.
As far as pages goes, can't help there, but I'm sure others will.
