I went the I Mac route but I understand that as long as there is a monitor plug plugged into the Mac mini it will work without a monitor. I have seen elsewhere that the neatest solution is to just plug in and unused adaptor plug and that will keep the Mac mini happy. No first hand experience of this though so I cannot swear to it.
