Why doesn't she have a separate profile in the computer itself? That's what my wife and I have always done, then she can do her own thing in her profile, and I can mine. Then she can set up her mail in her profile and you won't have to deal with it at all, she can just do command option shift q and log out of your's and log into her's you can still set it to default log into your profile at boot up if you wish or just come up on the log in screen then whoever is using the machine at the time can simply log into their profile from that point. Just set it up in accounts in system preferences.
You can also create a mailbox on your mac and then creat a rule that says any mail to her address goes into that box, then she can deal with it in her own time if you guys don't want to set up separate profile. However, after initial set up of the rule it will ask if you want to apply the new rule to any open mailboxes. Tell it no. Then close mail Then re open it from that point on it should send any new messages to that box. If you tell it yes in that dialog it might grab a lot or all of your mail in the open inbox and move it over there, thus a bunco of your mail will go in there. You upon re opening will have to move her messages that are already in your main inbox over to her box, but while setting on a message just do v o shift m and select the box in the move mail to sub menu.
