I don't have lion, (don't have the ram for it) but it's possible your mailboxes aren't trashed at all. If you highlight the trash folder, and use the vo-backslash key combination, it will close the trash folder, then you can navigate up/down (mostly up) and see if your other folders are still there. It's perfectly normal for your mailboxes to show up in the trash folder, because that's where your deleted mail goes. This does not mean that your mailboxes are gone, only that all the messages you deleted are in the trash. This has no bearing at all on the folders that exist in your actual inbox.

Obviously, it is possible you've deleted your entire inbox and all it's folders, but it's rather difficult to do that by accident, so I'd wager you'll find your mailboxes after you collapse the trash folder, then go up again to see the other mailboxes.
