I change my phone's name pretty frequently using iTunes but you do have to
have your phone plugged in, of course.

Many thanks for the info on how to change my iPhone name. It worked fine
doing it from the iPhone but when I first tried doing it from itunes my
new name got updated by the old name when I synced the phone. I expected a
name change to be traumatic and disruptive but it was real easy!
