Read iris is pretty simple to use. There is a good instructions document out there for configuring it to scan and save as RTF documents. I use it to scan mail and it works quite well for the most part. Note that if you have a canon scanner you will also need to obtain a copy of VueScan, for around $30 or $40 U.S. dollars.
