Hi Melissa!
I can answer the time question!
You can start up keyboard commander and under vo+f8 under general find the 
[allow voiceover to be controlled by applescripts] and check it!
Then if you press command+8 then you will be in commanders scroll through the 
options like enable keyboard commander and then you will see options to choose 
which option key you wish to use! the default should be the right one!
Then there should be a table of some commands that are already in place!
One of which is say time!
This will now happen if you press right option key+T
Right option+S should launch Safari
And Right option key+M should launch Mail!
You can set up your own as well But do not set up a Itunes one because there is 
a clash with launching Itunes and the Pressing the option key!
You can end up on the choose Itunes library window instead of going straight 
into Itunes!
There is also the option to set up Trackpad commander strokes or Num pad if you 
prefer!
