Just open the disk image file as you would normally open any mac
app. It will automatically mount on your system, and you can access
it from the finder as normal.
After you get the installer completed, you can simply close the
window, and unmount the image by using command-e (for eject) in the
finder when the folder it created is highlighted in finder (I usually
use the column mode of finder, and always start at the root of my
computer (command-shift-c) so all mounted images hds and other
networks are all available in a single list). Your mileage may vary.
