Indeed - I can vouch for the goodness of the vim port (my primary text editor at home :) - in most respects it's saner than the windows port, as you have easy access to all your unixey filters, and also better integrated cross-app cut and paste. (eg cmd-v is not just a remapping of "+p - it also works when you're already in insertion mode). The above refers to the standalone app - cf http://macvim.swdev.org/ - the commandline only version's bundled with later versions of OS X (can't remember if that started with Panther or Jag).
Must admit though - I preferred using vim under windows to the OS 9 port, so OS X's been a godsend in that department.
SSH I've yet to have call for, but I know it's commonly used on this platform, and there are several alternates to the apple-supplied Terminal kicking around - iTerm seems to have quite a good rep.
