The "nonempty" option in the Linux version of FUSE isn't something magical. The Linux FUSE mount utility normally disallows mounting over a non-empty directory to prevent accidental covering up of data--for example, in some cases, this could mess up automatic backup of the underlying directory.
I haven't put in this particular check in MacFUSE, so you don't need to use the "nonempty" option to mount over a non-empty directory. That said, MacFUSE is a Mac OS X implementation of the FUSE *API*, and not necessarily all of the Linux FUSE mount options. Sure, in general, it would be nice to have the same options on all platforms, but doing so may not be possible, necessary, or even sensible in some cases. Conversely, MacFUSE has many options that aren't found in Linux FUSE.
