Sam is right. Ian, I think you are going down a path that is not going to work, or at the least, will be more advanced than you intended. Anyways, Samba already gives you a file browser -- what could be the benefit of using SSH??
To change the port SSHFS would use, go to the MacFusion GUI, edit that connection, and find the "SSH Advanced" tab -- that is where you can specify the port to connect to. Which you will need to do.
