Uninstall instructions: http://code.google.com/p/macfuse/wiki/FAQ#2._Install/Uninstall_Questions
How MacFuse got there: http://code.google.com/p/macfuse/issues/detail?id=403#c6 It is entirely possible another application you installed has installed this as a part of its dependencies. It would seem strange that MacFUSE itself would have any interaction with iTunes, perhaps if you could share a screenshot of exactly what is happening because I'm not entirely sure why. Check out section 1.3 in the FAQ for more information about what MacFUSE is as to why this is probably not the case but most likely the application dependent upon MacFUSE. In which case uninstalling MacFUSE may not resolve the situation if the application requires it to operate or if it automatically reinstalls MacFUSE anyway.
