The G4 will work, but it is well well worth the extra money to get the
G5 (the time saved = $$$ alone will cause it to pay for itself
quickly.) I do a whole lot of digital photography and digital video
work and the G5 speed gains over the G4 are extremely nice.
But use the DP G5. (Remember a small 6 MB RAW file will turn into a 32
MB TIFF or PSD file (adding layers to these makes the file size go up
as well!), so she needs some horsepower to do the processing on those
files in reasonable amounts of time. If she is dealing with the 14 MB
Kodak or Canon RAW files, these get expand to a way larger TIFF or PSD
file and if she is using MF (22MB RAW file size) or LF (Huge file size)
equipment with digital backs, well, lets say it behooves her to not
skimp on the processing power. (It takes the very high end PCs to come
sort of close to the DP G5). I recommend a DP G5 with at least 2 GB of
memory (actually as much as she can put in there). Since she is not
moving legacy OS-9 apps over to the Mac platform, there should not be
major problems with the transition. Also the 23 inch HD Cinema Display
is a very good choice for a monitor.
As far as your other question (your own new system), it should work for
the most part. A 1.42 GHz DP desktop will blow a 1.33 GHz laptop out of
the water, but the laptop can go places the desktop cannot (or should
not).
