Am I right that the problem is the physical connection? I can't imagine 
a new G5 would have the port for what is probably a serial printer.

Isn't there some way she could set up her old computer as a print server 
just for the dot matrix printer? Seems to me that would solve a couple 
of problems. She could have it loaded with check stock all the time and 
it would work as a spooler.
