Not only do I set them up, I teach people how to use them.
I am in Ann Arbor teaching this week but let me offer you this advice.

Mac OS X is not Mac OS 9.
Mac OS X Server is not AppleShareIP

Where, in the past, one could muddle through, there is now a more complex
environment. I will not discuss the pros and cons of this, but the end
result is that it does require a deeper understanding of certain areas of
computing knowledge.
I might suggest you download the Mac OS X Server PDFs from Apple's site (the
server documentation page) and read the areas that interest you.
I know that MacTown is now an Apple Authorized Training Canter and will be
holding courses on Mac OS X Client and Mac OS X Server. You can see their
schedule on their site.
I have consulted with organizations as large as Lawrence Livermore National
Labs and Genentech and as small as my neighbor/designer across the street
from me.
They all run Mac OS X Server and they all decide when to pay for the
training they need and when they feel they can muddle through.
If training is not your bag, there are other lists purely devoted to Mac OS
X Server. Among them are Apple's own listserv, mac-managers, and OmniGroups
list, not name a few.

That said, I know everyone values the information on this list. If you want
to ask the questions to me directly, simply email them to me. I'll do my
best to answer but you should understand that an overview of how to setup
Mac OS X Server is probably your best bet.
