The big difference is how large is the drive? OS-9 tops out at being 
able to see not much more than 130 GB on a partition. So, If you are 
running the 400 GB drives, with an OS-9 system, then you need to 
partition them.

Otherwise, it is an idea of "do you put all of your eggs in one basket 
or not". Some folks feel that using partitions give you a bit of 
insurance and speed. If you manage to scramble one of the partitions, 
then you can still mount the drive from one of the other partitions and 
fix the bad one. [But if the drive goes bad, then you are out of luck 
because this will not work.] Also, the smaller partitions are speedier 
in accessing (reading and writing files) than the bigger ones. In OS-9.

OS-X can address bigger hard drives so it it not as necessary to split 
the drives up. The speed issue is not non-trivial in OS-X but usually 
that is handled by using separate drives (say one for video, one for 
audio, etc.).
