in iCal, click on the name of the calendar in the upper left corner.
click on the "i" with a circle on it in the bottom right corner to  
show the "info" pane (if it's not already)

in the upper right corner of the info pane there is a box colored red  
with arrows next to it.
click on it, and you have a few other color choices, or choose  
"other" to select your own color.

yeah! no more red..
