I use Parallels and XP on my MacBook Pro (running Leopard). It's not  
real fast, but it's stable. I prefer it over Bootcamp because I often  
want to use it for just a few tasks (mainly Web related) and don't  
want to have to reboot twice to get from Mac OS to Windows and back to  
Mac OS.

I find that I can leave it running in the background without too much  
of a processor hit as long as I pause it and minimize it to the Dock.

The worst part is the longish boot-up time — which usually entails  
downloading updated virus definitions and often includes a Windows  
system update on top of that. From the point I start up Windows to the  
point when I can do anything useful it's at least two minutes and if  
there's a system update and a lot of new virus definitions can be as  
long as five minutes.
