Good news Harry,
From as early as iPhoto 5, you can change the creation date as laid
out by John below. And you can use the Batch Change command for a
group of photos.

You can also change the date right in the information box in the
lower
left corner of iPhoto by typing over the date and or time. iPhoto 09
is a fantastic piece of software.

I haven't tried changing dates on other types of files.
