I suppose you back your phone up. Is it backed up on a mac or pc? It could be as easy as a hard start. If not restore it from iTunes.

You will see it on the first tab of your iPhone when you plug it in and it loads on iTunes. I have had app's crash on startup and I deleted them then restored them from iTunes to fix the problem. But with Mail on the phone along with the other basic iPhone app's you can not delete the app's.
So Try a restore of your iPhone.
