Thanks, John, this has bothered me.And you know, it is just a small
thing. The Bean has a slider at the bottom to change the size of the
text; so when it comes in larger, then i have to slide back and forth
and I never quite hit the 100% easily. The text-edit gives you the
percentages and you just click on the size you want. A small thing,
but it makes a difference when you get these files with odd sizes and
you usually have to bring them down to read easily.

Do a "get info." on the file and in the list of items in that
window about midway there is a section "Open With" and it will show
Bean in there now. Click on the arrow and pick text edit, then
click on the button below that says "change all". Hopefully that
will do it.

style. I have Bean set that way.
I have forgotten how to have a file open in text edit by default,
instead of right click using "open with ...." I can't remember
where those basic "defaults" are located.
