Anne,

if you put new photo's into iPhoto, add new music to the iTunes then when you 
dock your iPod the new items will automatically be added IF you have checked to 
do so in the preference file. (there is where you tell it to add all music our 
just certain folders, and if you want all photo's or only certain folders).    
You don't have to wipe everything out and start over it does it all for you 
each time you dock.
