On the first tab of your iPod preferences there is a manual sync checkbox just check that. Apple always by default has automatic sync turned on. With the manual sync turned on You can select what you want on your iDevice and drag and drop content on to the iDevice. The tabs for Photos and Podcast's will allow you to pick just the files you want on your iDevice.
