Gmail is kind of screwy with IMAP because it uses labels instead of real 
folders, so there are some translation issues. I think the Archive folder in 
Apple mail is really the All Mail label in Gmail. As such, you can’t remove it 
from Gmail because every non-trashed Gmail message has the label All Mail. But, 
you should be able to remove it from the list seen by IMAP. Try logging into 
your Gmail account and turning off the Show in IMAP option under 
Settings>Labels. You might have to restart mail to get it to catch hold.

You might try under Settings>Forwarding and IMAP/POP to massage your settings 
for deletion and expunge. I don’t know how to stop it from archiving sent 
messages, except by using another SMTP server.

You just have to remember, from Google’s viewpoint, you are the product and 
they are the consumer. They don’t want you to delete emails because scanning 
your emails gives them more information about you. They make their money 
selling you to their advertisers. In other words, Gmail isn’t free. I use Gmail 
as my junk mailbox, but I don’t do anything personal on it.
