What script are you using to read the ADC? It needs to be able to continue through the occasional errors encountered when reading the ADC value via sysfs. If these errors are not handled, you will get behavior like what you're seeing (the user-mode python code crashes when the kernel throws an I/O Error, at which point the temperatures stop updating).
