At home: Mac <-> Modem <-> Phone line.

At Church: Phone line <-> Modem <-> UART <-> Sensor.

The UART is an electronic device, a chip or two, that converts the data coming in to RS-232 that the Modem can read.

The above would work for simple sensors - thermocouples, etc. But not for complex things like video.

This will be very intermittent, like 1 minute, twice a day.
This will be used to monitor a furnace room in a church.

Look into home and business security type systems.

They often have wired and wireless sensors, video, etc. Each sensor includes a small microprocessor and the necessary logic and telecom device. Some of the more expensive ones will let you relay the data out of the central control box, via modem.
