Use IMAP for your mail. This is what IMAP is designed for. I access my mail 
(ALL my mail) from my Mac Pro, my MBP, my iBook G4, my iPhone, the web, and 
even sometimes from a Windows PC.

OS X Server (and OS X, for that matter) can run a real mail server. You can get 
mail from backward ISPs that only have POP3 accounts and put it into an IMAP 
store so that your mail can be accessed from any server, and the status of the 
mail will be retained regardless of which machine you last used (read messages 
will always be read, replies will be filed and properly linked, etc).

OS X Server upgrades? I'm not sure that there are server upgrade prices, 
however the price of server has been, effectively, cut in half with Snow 
Leopard ($499). I have no idea how much it will cost to go to 10.7 Server, but 
I would not be surprised if it was $499.
