Consider using Mountain Lion and iCloud. Apple Apps of the Mountain Lion 
integrated variety, 
(iWork, iPlay, etc.) will store the data In/on Icloud. ... however if she is 
using Microsoft's educational bundle, I don't believe they know about iCloud.

You can make iterations of the document independently via save as if you want.

I don't use versioning myself, but the theory is -- you can retrieve different 
"updates" of the document than the latest.
