I know this isn't ssh, but maybe there is something similiar at work. The rejection of the MD5:SHA hash probably means, that the iOS device wants to use it, but the server because of some security setting only accepts other hashes (maybe RC4 ? :)). But I don't know where to look for that configuration in OS X VPN.
