to begin with, there is no great Photoshop replacement

i don't know what you need all this for, but here are some ideas:

* get the iMac instead of the Mac Pro, especially if the Mac Pro gives you an advantage in only some of your work; biggest downside is the glossy screen

* if the Education price is available to you, and/or if you can bear to leave flash behind and let go of Dreamweaver, get CS5 Design Standard

* get CS4 now with the right to a free upgrade, because CS5 may well be buggy for a year or so anyway

* find CS4 used (with a proper transfer of license)

* buy just InDesign and Photoshop -- these are the two apps that are hardest to replace; InDesign can be used for some of what Acrobat can do

* consider replacing Dreamweaver with Espresso and/or CSSEdit (i have both, but since i mostly work with Drupal, BBEdit is all i really need)

* to replace Illustrator, consider OmniGraffle Pro or Inkscape; each has different strengths, so it depends on your needs; Inkscape has gotten much more stable in the last year or so
