It's not hidden.  You must have "Wrap to page" chosen in the Preferences.  Just 
turn it off.  It's not the default, so at some point you must have turned it 
on.  If you only want to do it on the occasional document, just turn off Wrap 
to Window in the Format menu for that one document.  (Hm, I never noticed the 
wording difference before!)
