You could use Chicken of the VNC or Vine Viewer to access your remote machine
instead of Screen Sharing. They don't let command-tab through. (Vine Viewer
actually has a menu item for "Send Command-Tab," but I've never been able to
get it to do anything, probably because it immediately assumes command has been
released.)
You don't have to change anything on the iTunes machine to do this, so it costs
you nothing to just give it a try.
