But there is a defaults command as mentioned at MacOS X Hints.
There's a default for ScreenSharing and RemoteDesktop.

defaults write com.apple.RemoteDesktop DoNotSendSystemKeys -bool YES


Personally, I like the new behavior, but I do wish there was a way to
momentarily disable it.  Adding another key to the sequence, or a menu
option or toolbar button.
