I think it depends on what you want. If you want to simply access attains from 
the NAS, then I think you leave all the iTunes folder intact and use a program 
running on the NAS to server iTunes. I forget the name of these, but they 
should be easy enough to find.

If you do not mount the NAS with AFP you should not see an afp mount for it. 
Assuming you’re running 10.10, use smb.
