I'm beginning to hate the Internet Of Things...

I have a Sierra MacPro that's operating within a private, dedicated, secure LAN
with no internet access. I'm trying to hook up an HP inkjet printer to it, but
the HP installation software REQUIRES an internet connection to phone home. No
internet? No install! It fails! WHY???

The HP install program comes up with an ambigously phrased generic blurb about
how it sends back all kinds of info: operating system, locale settings, IP
address, and who knows what all else. WHY???

Is there an inkjet printer (Brother, Canon, Epson) that can be installed
without phoning home?
