It sounds like your CUPS printer driver is out of date. If you're lucky, it's only your copy. If you're not lucky, there may be no up to date driver available.
If this is your only printer, reset the printing system <https://support.apple.com/kb/ph25565?locale=en_US> and setup your Epson again from scratch.
