I figured out what the problem is... but I don't think there's a solution. My Canon p/s/c is connected via USB to my Airport Extreme, which shares it to all of my Macs.
I tried running Canon's own scanning utility, and it says it can't connect to the scanner, though printing works just fine. So... if I connect the printer directly to my Mac Pro, it sees it as a scanner, and Sys Prefs shows the "Print/Scan" tab.
