I use the most funky TextExtras, which (amongst other things) allows
me to pass selections through arbitrary Unix pipes - and bind said
user pipes to key combinations.

Not quite what you want... but *very* useful.

For example, I have command-/ bound to a little perl program that
formats my mail messages the way I like them - which I use rather than
letting the Mail app mangle it :-)
