I very occasionally get these and use them as an opportunity to reach
out to the customer so they can see a real person is behind the
software.

I fire off a quick email that says (roughly):

I just received notice that you've initiated an eCheck payment for
Propane - thanks very much for buying it.

eChecks take a few days to clear and it's often not what people
intended to use.

I've been bitten a few times where I've accidentally paid by eCheck
and would have rather just used a credit-card to complete the
transaction immediately.

If this is the case for you, I'd be happy to cancel your eCheck
payment so you can redo the purchase with a credit-card.

About half the time I get a response saying "thanks so much, I had no
idea why it did that". The other times the response has been "thanks
for watching out for this but I meant to pay by eCheck".

Yes, it would be simpler to just process the order straight away (I
agree that there's easier ways to steal software) but the extra 2
minutes helps me build a more personal relationship and I like that.
