"Even the expensive tools have been extremely buggy making the process
even more cumbersome."

What?! I've bought Screenflow almost two years ago for 99$ and got
*free* upgrades for almost a year. It's rock solid and getting better.

There's also Techsmith's Camtasia for Mac currently being introduced
for 99$ (http://www.techsmith.com/camtasiamac/) with twice the feature
set and efficiency of ScreenFlow. 99$ in cheap for any type of video
production tool.

As for productions skills, YMMV. Personally, I find that the process
is easier once you have spent some time writing a good manual/user
guide. The manual can then serve as a "script" for the screencasts +
you can reuse some of the manual's illustrations.
