My guess is that something in your kernel or your configuration is causing it; I have been running Gentoo on a Mini for awhile and never noticed it going to sleep without me telling it to.
Try compiling your own kernel, and/or checking out your ACPI set up. I imagine that maybe acpid is telling the machine to go to sleep due to inactivity.
