Alpine also does this; I just tried and it prompts you whether or not you'd like to reply using the reply address.
The problem is that using a textmode client makes it rather hard to be efficient with speech only under OS X. It works reasonably well, but not well enough to replace a native GUI client, I think. If you want a command-line client that has network support, try Heirloom mailx; it's entirely /bin/mail compatible, and yet it supports GPG and S/MIME, reading via POP and IMAP, and sending via SMTP.
