I suppose that depends on what you consider easy. Pandoc can generate EPUB 3
documents from any of the input formats it supports, including Markdown. You
can write your document in Markdown format using any text editor, then run
Pandoc to generate an EPUB version.

I much prefer writing directly in a markup language (HTML, Markdown, LaTeX,
etc.) to using a word processor. I only use a word processor when I receive a
file in a word processor format and I need to edit it, then send it back in
the same format.
