The problem with using Time Machine is that after the initial backup, TM will backup the entire VNware folder again which, in my case is over 50 gigs. Will not take long to choke the drive that TM uses.

My solution was to exclude that folder in TM. I use Carbon Copy Cloner and created a new task for the VMware folder only and run it weekly. It will replace the last backup with the current one.
