Hmm, if the video digitizer device were to show up as just another camera you could use plain old quicktime to record a movie from that source. It's been a long time but I think the old firewire ones did just that. You might find a used Sony DVMC-DA2 Media Converter somewhere for not a lot. USB ones can be a bit more tricky because some appear to the machine as a camera and some use their own proprietary software.
