Hi,

 To make a USB installer you only need around 6 to 7 gig so an 8 gig USB drive 
is enough.

 I highly suggest USB 3 which covers usb2 as well but 3 works bloody quick in a 
new machine.

 As for removing a machine from the beta program, check the site for the beta 
setup and see what it says but I'm sure a full recovery of the HD will remove 
the beta installation back to default.
