That is a lot of work. (smiles) Granted, the method I shared only changes the Voiceover label. One can go into iTunes, connect the iDevice and then change the actual label so not only will Voiceover speak the new label but sighted people will read it as well.

   Or, disable VO and then change the label.

Inside the zip is a info.plist and one of the items in the plist should be the name of the application. If Apple phone apps are properly secure you won't be able to use the app if you change this file, but it might be worth a try.

Look for the folder Mobile Applications and then rename the app to have a .zip extension then open the zip file and look around. Of course do this on a copy of the mobile application.
