But the only thing it says, is to uncheck all.
I did so, but then when I delete a mail, from (let's say) the
Macvisionaries folder/label, it only removes the label, and the mail is
still on the server - in the "all mail"-folder.
The "all mail"-folder is full of stuff, so when I found the mail there,
and deleted it, I don't know if it's all gone or if it is still on the
server somewhere...:(

It depends I think on what setup you are using for your Mac and GMail. If you
are using POP3, then all your messages should end up in Mail's Trash folder. If
you are using IMAP, they will still end up in the Trash folder, but your
actions on your Mac should be mirrored on the website and in all your accounts
assuming that you are using other computers too.
