Anders, As I recall, in all previous versions of Mac OS, even if the bootable stick is prepared correctly, it does not show up in the Startup Disk preferences dialog box.
The last time I checked, the only way I could see the bootable stick was via the Option key-press at startup. I have not yet made a bootable High Sierra stick so cannot confirm this but such was definitely the case in the previous OS.
